MY REVIEW:

The #1 New York Times Bestselling cookbook FIX-IT AND FORGET-IT COOKBOOK, Revised & Updated by Phyllis Pellman Good, is an unbelievable cookbook filled with 700 slow cooker recipes. If you are like me whose day is filled and you work, in or out of your home, this is such a great resource! Put the meal in the slow cooker and like it says "forget it" until it is time to serve. The slow cookers are the "ordinary workhorses" that are just in your kitchen begging for you to use them more. They enable you to prepare and serve a meal more economically and with little fuss and I think, best of all, allows you to sit with your family and friends and enjoy the meal rather than being up and down with preparations...and the clean-up is much quicker as well.

Phyllis Pellman Good gives you 7 tips on picking and using the cooker to its best advantage in her introduction and at the end of the book she has included: a superb index for an easy way to find whatever you are looking for; equivalent measures that I find invaluable like 1 medium sized onion is really 1/2 cup chopped; assumptions about ingredients and helpful hints; kitchen tools and equipment you really should have but don't panic as she means things like do you have a couple of wooden spoons to use?; and my favorite is "Substitute Ingredients for when you are in a pinch" like "Eek! I needed 2 tbsp. of tapioca and I don't have that!" so it tells you it is OK to substitute 3 tbsp. of all-purpose flour! Phew! That right there is worth the price of the book.

But the "meat" of the book is the recipes. They are gathered from people all around the country and each person is given credit. Phyllis tests them and includes them as she knows these are workable and good food to prepare in you slow cooker. The recipes are divided into eight sections from Appetizers, Breakfast Foods, Breads, and Soups, Stews & Chilis to Main Dishes, Vegetables, Desserts, and Beverages. Very helpful is the section on Main Dishes, the largest of course, and it is sub-divided into eight main ingredients like Beef Main Dishes or Seafood Main Dishes and even includes Meatless Main Dishes!

I won't begin to tell you all the recipes OR that I have tried them all but I will give you just a couple of examples that I did try and we all enjoyed and my family was shocked that I cooked something beside "take-out food"! EASY Pot Roast and Vegetables was one I tried because I saw that word EASY and boy was it. There were several variations by contributors but I used Betty Lahman's, Elkton, Va. Prep time was 5-8 minutes and cooking time was 6-8 hours. Simple ingredients of roast, potatoes, carrots, celery, dry onion soup mix, and water followed by 3 steps in the preparation. Mainly you put the things in the cooker, added the dry soup mix next, and added water. Can you believe that's it? And was it good!!!

My second recipe was a dessert and had 4 ingredients that are refrigerated pie dough, apple pie filling, cinnamon, and caramels (see my theme here still on "EASY"). I didn't think it would work but thank you Sue Hamilton from Minooka, IL, because with the 5 easy prep steps, we had a yummy dessert! I highly recommend this cookbook as an invaluable resource to make your life easier and meals varied and delicious!

BROCCOLI CORN BREAD
BY WINNFRED EWY
NEWTON, KS

Makes 8 servings

Prep. Time: 15 minutes
Cooking Time: 6 hours
Ideal slow-cooker size: 3- to 4-qt

1 stick margarine, melted
10-oz pkg. chopped broccoli, cooked and drained
1 onion, chopped
1 box corn bread mix
4 eggs, well beaten
8 oz. cottage cheese
1¼ tsp. salt

1. Combine all ingredients. Mix well.

2. Pour into greased slow cooker. Cook on Low 6 hours, or until toothpick inserted in center comes out clean.

Serving suggestion: Serve like spoon bread, or invert the pot, remove bread, and cut into wedges.
