Peggy has a degree in dietetics from the University of Illinois at Urbana-Champaign. She lives with her husband and son in rural Wisconsin and enjoys food the most when she's grown it in her home garden, making the connection from the field to the table.

RECIPES: 
 FROZEN CHOCOLATE DELIGHT
Ingredients:
  • 3/4 cup cold fat-free milk
  • 1 package (1.4 ounces) sugar-free instant chocolate pudding mix
  • 2 cups fat-free vanilla frozen yogurt, softened
  • 1/4 cup reduced-fat chunky peanut butter
  • 2 cups plus 2 tablespoons fat-free whipped topping, divided

Directions:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Stir in the frozen yogurt and peanut butter until blended. Fold in 1 cup whipped topping. Transfer to an 8-in. square dish coated with cooking spray. Cover and freeze until firm.
  • Remove from the freezer 10 minutes before serving. Cut into nine squares. Garnish each with 2 tablespoons whipped topping. 
  • Yield: 9 servings.

SIMPLE LEMON PIE 
Ingredients:
  • 1 package (.8 ounce) sugar-free cook-and-serve vanilla pudding mix
  • 1 package (.3 ounce) sugar-free lemon gelatin
  • 2-1/3 cups water
  • 1/3 cup lemon juice
  • 1 reduced-fat graham cracker crust (8 inches)
  • 1-1/2 cups reduced-fat whipped topping

Directions:

  • Small saucepan, combine pudding mix and gelatin. Add water and lemon juice; stir until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook and stir 1-2 minutes longer or until thickened.
  • Remove from the heat; cool slightly. Pour into crust. Cover and refrigerate for 6 hours or overnight. Spread with whipped topping. 
  • Yield: 8 servings.
